Chi-Chi’s, the iconic Mexican restaurant chain, is set for a grand revival with a flagship location opening in St. Louis Park, Minnesota. This marks the brand’s return after a 20-year hiatus under new ownership. The restaurant is scheduled to open its doors at 11 a.m. local time on Monday, October 6, 2025.

- Original Nachos Grande: House tortilla chips with refried beans, ground beef, cheese, and jalapeños.
- Chi-Chi’s Original Chimichanga: Crispy chimichangas packed with beef, chicken, short rib, or red chili, served with guacamole and rice.
- Quesabirria Tacos: Corn tacos filled with slow-cooked beef and oaxaca cheese, served with consommé.
- Seafood Enchiladas: Shrimp and crab in lobster cream sauce.
- Manchego Burger: Angus beef with manchego cheese and chipotle mayonnaise.
- El Burro Con Queso: A burrito filled with beef or chicken, queso, and ranchero sauce.

Michael McDermott, son of Chi-Chi’s co-founder Marno McDermott, expressed excitement about the brand’s rejuvenation, stating, “We’re bringing back the food, energy, and fun that people love, now with a fresh twist for a whole new generation.”
From Bankruptcy to Resurgence
Chi-Chi’s was a prominent name in the 90s before filing for bankruptcy in 2003 following a health outbreak linked to one of its locations. Despite closing its last U.S. restaurant in 2004, Chi-Chi’s brand remained popular through licensing deals including salsas and sauces. The chain’s comeback is powered by an agreement with Hormel Foods, enabling the reopening under new ownership.
